My favorite part of quinoa is it’s unique texture. The seeds are crunchy and soft and almost pop when you chew them. Some people are offput by this but I find it fantastic. The other two things that I adore about quinoa are that it contains more protein than most grains, like rice for instance.

And then also that it cooks very quickly. More like white rice does when compared to brown, which takes forever. Quinoa is extremely fast to prepare which makes it a great way to get complex carbs, fiber, and protein really quickly.
